ABSTRACT This study has been prepared taking as a reference the City of Trujillo, in order to measure the level of acceptance of a fast food restaurant oriented to Peruvian fruits, thus promoting consumption and contribute to healthy eating. To do this we needed to identify the most significant features that influence the level of acceptance of the business idea. The denomination of ´´Peruvian fruit´ ´includes native fruit and those produced in the Peruvian territory. The districts of Trujillo and Victor Larco were considered in the election of the sample in the study because they are the most representative districts of the city, and that the results are limited to these two districts with a sample of 382 people. As an essential part of this investigation a market research supported by qualitative and quantitative techniques were conducted focus groups and surveys respectively. Three focus-group sessions were carried out, gathering the information that stood out, which was the basis for drafting the qualitative study. All three groups showed an interest in consuming Peruvian fruits in this presentation, some in order to keep a balanced diet, others because of the energy these provide or because of time constraints. They also mentioned that they thought fruit consumption or healthy eating weren’t being promoted; and that cleanliness, fruit selection, selection of complements, and information on the benefits of fruit is fundamental for this type of business. Contrasting these results with the quantitative study, we obtained an acceptance sampling of 48.4% of those surveyed who answered that they liked the idea, followed by 36.6% who liked it very much, 13.4% who were indifferent to it, 1% who did not like it, and 0.05% who didn’t like anything. Likewise, 49% of those surveyed answered with a Definitely Yes when asked if they would be willing to consume salads and fruit in a fast-food context, followed by a 40% Yes rate; 10% thinks Maybe Yes or Maybe No; and in opposition to that, 1% was not willing to consume in a fast-food context. According to those surveyed, the attributes that were most important at a fastfood establishment that serves Peruvian fruit salads are first and foremost cleanliness, at 59.4%, followed by a near tie between service and diversity, at 18.1% and 16.8%, respectively. Furthermore, of the complements proposed to add to the fruit salad, the majority opted for natural yogurt at 79%, natural fruit ice cream at 65.7%, condensed milk at 58.1%, and corn flakes at 53.7%. Almonds were also chosen at a high percentage, at 45.4%, grated coconut at 40.3%, and chocolate fudge at 39.5%. In conclusion, we can see a positive outlook with regard to the idea of a fast food–style restaurant that offers Peruvian fruits in several presentations. The aim of this research project is to serve as a support for possible investors interested in the fast food, healthy eating, and national identity industries.
