The general objective of this work is to apply the proposal for improvement in the production and logistics management of a catering company through the use of industrial engineering tools to increase profitability, whether by manual operation, low production capacity, forecasts deficient, reactive purchases or obsolete raw materials. Once the problem, objectives, hypotheses and variables were raised, production and logistics management were used, in which tools such as work study, time study, seasonal forecasts, MAD, tracking signal, MRP and good practices were applied. storage, these improvement proposals were applied to each of the root causes presented by the company through the Ishikawa diagram, focusing on those that have the greatest impact on the profitability of the company with a total of 5. The improvement proposals were based on the implementation of industrial engineering tools, which made it possible to eliminate or reduce activities that did not generate any value for the company, causing customer dissatisfaction. Implementing these improvements, a total profit of S / 6,221 would be obtained. The NPV was S / 1,189. The IRR, 68.92%; The Benefit-Cost 1.83 and the Period of Return on Investment (PRI), 6 months. These indicators demonstrate the suitability of the proposal.
