Aplicación de teoría de restricciones para disminuir los costos operacionales en la producción de bebibles de la empresa Marco Antonio SRL

Abstract

RESUMEN: La presente tesis busca determinar y disminuir los costos totales en las actividades del proceso de producción en la empresa Marco Antonio SRL. de Trujillo, a través de la aplicación de la teoría de restricciones, con el fin de establecer una cultura de mejora en el día a día y sean puntos de partida para la identificación de restricciones y estas puedan dar solución a los problemas de la empresa en estudio. El análisis de los costos totales fue evaluado previo a la implementación, determinando los indicadores como utilidad. Cabe recalcar que para observar el crecimiento, en cuanto a los indicadores, se trabajó con los promedios de 6 meses y con los resultados del mes de mayo a Julio. De esta manera se realiza un estudio pre experimental para manipular la variable independiente de teoría de restricción y observar su efecto en la variable dependiente disminuyendo los costos totales. Para identificar la restricción se utilizó una matriz de selección dando como resultado que el área crítica es el proceso de Cocción de la M.P. Para decidir cómo explotar al máximo tal restricción se aplicó herramientas como SMED, 5´S, el Plan de capacitación que fueron evaluadas económica y financieramente, En la herramienta 5´S, se logró un incremento en el cumplimiento de la metodología. En la herramienta SMED se analizaron las actividades del proceso del bebible, las cuales fueron analizadas para su posterior reducción de tiempos. Con toda la información recopilada y a partir del diagnóstico que se realizó, se presentará un análisis de los resultados y discusión para poder corroborar con datos cuantitativos las evidencias presentadas y la mejora lograda con la aplicación de teoría de restricciones para disminuir los costos operacionales en la producción de bebibles de la empresa MARCO ANTONIO SRL.

The present thesis thinks about how to determine and diminish the entire costs in the activities of the process of production in the company Marco Antonio SRL. of Trujillo, across the application of the theory of restrictions, in order to establish a progress culture day by day and be starting points for the restrictions identification and these could give solution to the problems of the company in study. The analysis of the entire costs was evaluated before to the implementation, determining the indicators as a utility. It is necessary to stress that to observe the growth, as for the indicators, one worked with the averages of 6 months and with the results from May until July. This way a study is realized pre experimentally to manipulate the variable independent from theory of restriction and to observe its effect in the dependent variable diminishing the entire costs. To identify the restriction a selection counterfoil was used giving like result that the critical area is the process of Cooking of the M. P. To decide how to exploit to the maximum such a restriction it applied hardware to itself as SMED, 5'S, the Plan of training that they were evaluated economically and financially, In the tool 5'S, an increase was achieved in the fulfillment of the methodology. In the tool SMED there were analyzed the activities of the process of the drinkable one, which were analyzed for its later times reduction. With all the compiled information and from the diagnosis that was realized, there will appear an analysis of the results and discussion to be able to corroborate with quantitative information the presented evidences and the progress achieved with the application of theory of restrictions to diminish the operational costs in the production of drinkable of the company MARCO ANTONIO SRL.
