ABSTRACT Cajamarca a city with more than 50 thousand inhabitants has daily consumption of meat of different species, however, the municipal camal does not meet the minimum quality standards that a center of this nature should have. In the Camal Municipal of Cajamarca, sheep, cattle and pigs are sacrificed in order to generate a quality product and service to provide the sales centers such as the San Antonio, San Martin and San Martín markets. José among others, through this can satisfy the need of the whole city of Cajamarca and surroundings. Today, the Camal Municipal of Cajamarca is slaughtered approximately 70 cows, 75 pigs and 45 sheep, through this process so that the animals can be slaughtered have to have a certificate stating that they have no problem of Heal th as the animals that have a disease are urgently slaughtered or at worst are not slaughtered since the meat is consumed by human persons, later all the animals pass to the observation area where these animals are a prudent time of one Day approximately for the revisions of the case and later to be slaughtered generating an approximate of 3000 kilograms of daily meat between sheep, cattle and pork, for such slaughter is necessary of some important materials as they are: firewood, water, electricity and labor. Taking the visits that corresponded, we observed the problems that exist in this camal and focused mainly on the unnecessary consumption of drinking water, this happens because the workers of the different areas do not have the training and the necessary tools to diminish the consumption of water. With the Cleaner Production methodology, water consumption will be reduced in all processes where an animal passes for slaughter. The tools that have been used are, process diagrams, Ishikawa, plant layout, eco maps, etc. The Cleaner Production Methodology was determined as the main method to reduce water consumption. In conclusion, we reached the following results obtained after proposing the Cleaner Production methodology are: • The diagnosis of the current situation of the Camal Municipal of Cajamarca was made. • Water consumption was evaluated at the time of slaughtering of the animals. • A proposal was proposed for the Cleaner Production Methodology in the Municipal Camal. • It was evaluated the indicators of t he proposal of the methodology of cleaner production in the Municipal Camal. • The Cost - Benefit evaluation of the proposal of Implementation of the Cleaner Production Methodology in Camal Municipal of Cajamarca. It is recommended to keep a constant control of the Cleaner Production implementation, to make constant trainings to old and new collaborators that are going to be incorporated so that it remains useful over time the proposed methodology.
