The objective of this work was to design the improvement of processes in the mineral water production area to increase productivity in the company GRUPO EJ SRL, through the application of industrial engineering tools such as: Time studies,% of productive activities and unproductive, working methods, ergonomics and 5's methodology; For this, the research focused on the production of 20-liter mineral water drums, as it is the production with the highest volume. In the first place, the current diagnosis of the processes was carried out to identify the problems that the company has through a flow diagram, process analysis diagram, Ishikawa diagram, among others; and at the same time the current productivity of the production plant was determined. Then, the process improvement design was carried out, which consisted of taking times, standardizing them, acquisition of new machines and equipment, creation of work instructions and manuals to improve work methods, improvements in ergonomics. of the operator and the implementation of the 5's methodology and a training plan. With this process improvement design, it was possible to estimate the increase in labor productivity in 24 more drums per operator, the HH productivity in 3 more drums per HH, the raw material productivity in 0.014 more drums per liter of water untreated, and in total productivity in 0.06 drums for each sun invested.
