The city of Lambayeque is one of the most visited destinations in Peru, due to its wide variety of inputs, its great cultural and historical load, its renowned dishes and its tourist places (Commission for the Promotion of Peru for Exports and Tourism, 2019 ). In addition, it is recognized nationally and internationally for its gastronomic fairs within the cities of Monsefú, Ferreñafe, Chiclayo and Lambayeque city. (Benitez, 2020) These data give it an important position at the gastronomic level, however, the dissemination given to gastronomy based on the cultural infrastructure is zero. Lambayeque does not have museums or cultural centers that host activities related to gastronomy, and, as for restaurants, they do not show a push towards regional food, since it is placed at the same level of importance as fast food. In this sense, it can be concluded that considerable value is not given to the dissemination of Lambayecan gastronomy, since there are no permanent places that host activities focused on its traditional foods and culinary history. For this reason, Casa Montjoy was chosen to create an experiential themed restaurant. With this, the intention is to promote a perennial infrastructure that serves as an example and can be replicated in each region of the country, where suitable spaces are provided that allow gastronomic tourists to develop activities linked to Lambayecan gastronomy and the history it houses. Casa Montjoy is located in the historic heart of Lambayeque. In addition, it has the longest balcony in South America, where the cry for freedom was first raised (Universidad Señor de Sipán, 2019), which is why it is also important to honor its historical value. The proposal of an experiential themed restaurant is pertinent in the study region because there is a great demand for gastronomic tourists and a shortage of supply in terms of places to host them.
