-- Yacón (Smallanthus sonchifolius Poepp & Endl) is a plant native to South America that at is root store carbohydrates as inulin and /or fructooligosaccharides (FOS) (polymers of fructose), which are recognized as dietary fiber and prebiotic. A prebiotic is defined as roughage favorably affecting the health of consumers, by selectively stimulating the growth of a group of beneficial bacteria in the digestive tract, thereby improving the intestinal balance. This study aim is to optimize the processing conditions yacon flour sugars asses and evaluate the influence of oatmeal into the growth of two probiotic bacteria. By a design that might be considered optimum, optimize flour obtaining, by comparing the two forms obtained, by comparing both and getting an improvement in the amount of total and reducing sugars in which percentages are 88,15 and 3,09 respectively of second form to obtain the yacón flour. As for his influence on probiotic bacteria, Lactobacillus acidophilus and Bifiobacterium brevis could see that yacon flour significantly improved the growth of both bacteria.
