--- In this research work, the red fruits phytochemical study of the vegetal species Prunus domestica L., Ficus carica L. and Vitis vinifera L. c.v. “Red Globe”, commonly known as prune, fig and “Red Globe” grape, respectively was made. These fruits were harvested in Lima and Ica departments since November 2010 to March 2011. The study starts with the tree red fruits species selection and harvest. After washing the fruits, the color index (CI) was set, found that grape had an 177,22 CI, prune 164,52 CI and fig 53,04 CI. The anthocyanins extraction was made using methanol as solvent. With the methanolic extract, chromatographic essays was made using Whatman Nº 3 paper and BAW as mobile phase where anthocyanins presence was found. The anthocyanins were isolated cutting the colored bands eluting from these bands in 0,01% HCl in methanol, to be read in the spectrophotometer. According the literature, the observed results are not conclusive, therefore it was HPLC contrasted. The initial results show cyanidin presence in fig, cyanidin and peonidin in prune; and cyanidin, malvidin and peonidin in grape. The HPLC chromatography show that in the fig sample was found cyanidin 3-glucoside and cyanidin 3-rhamnoglucoside; in the prune sample the cyanidin 3-xylose, cyanidin 3-glucoside, cyanidin 3-rutinoside, peonidin 3-glucoside and peonidin 3-rutinoside; as in the grape was found the delphinidin 3-glucoside, cyanidin 3- glucoside, petunidin 3-glucoside, peonidin 3-glucoside and malvidin 3- glucoside. The total monomeric anthocyanins quantification of the three fruits show that there are a bigger monomeric anthocyanins amount (enunciate in mg of cyanidin 3-glucoside/100g) in prune 39,92, followed by fig 30,09 and at last the red globe grape 21,28. Finally, it was determined the anthocyanin biological activity by means of fruits antioxidant capacity, found that the grape show a CI50 (µg/mL) of 3,87, the fig a CI50 (µg/mL) of 8,50 and the prune a CI 50 (µg/mL) of 13,25.
