--- Introduction: Anaemia is a problem of a public health which in the last few years it’s gradually increasing, mostly by inadequate intake of iron. It affects millions of people throughout their life cycle, especially infants, children and pregnant women. There are intervention strategies to prevent the lack of this mineral, between them foods fortification. Chicken blood is a food with high amount of bioavailable iron and readily available. Objectives: Develop and determine the nutritional quality of the sweet bun filling with chicken’s blood and acceptability in preschool children. Design: Technologic. Method: The nutritional quality was determined from the content of iron, physical chemical and microbiological criteria. The acceptability was evaluated using a three points facial hedonic scale. Place: The product development was held in the Miraflores municipal preschoolar institution. Participants: The acceptability judging panel was formed by 36 preschoolar students, between 4-5 years old. Results: Final product: 52g. Iron content: 7.61mg/100g. Protein content: 13.86g/100g. Physical chemical and microbiological criteria indicated that final product was suitable for human consum and it was obteined 94.4% in the acceptability proof. Conclusions: The product has an adequate nutritional quality and it was acceptable for preschoolar children. Key words: Iron, fortification, chicken bood, nutritional quality, acceptability
