Resumen: El objetivo de este estudio fue obtener lactobacilos nativos productores de exopolisacàridos de interés biotecnológico, que tengan una potencial utilidad en las diferentes industrias como bioespesantes naturales mejorando así las propiedades reológicas de los productos. Para lograr este objetivo se tomaron 30 muestras de alimentos fermentados y de fuentes naturales nativas obteniéndose 15 aislados productores de exopolisacáridos (EPS), luego se seleciono 5 aislados que produjeron la mayor cantidad de EPS. A los aislados seleccionados se les sometió a crecer a diferentes parámetros fisicoquímicos como: temperatura, pH y fuente de carbono, encontrándose que en algunos casos las condiciones óptimas de producción diferían de las de crecimiento. Asimismo los aislados fueron identificados por los métodos fenotípicos y bioquímicos tradicionales y por la prueba molecular denominada reacción en cadena de la polimerasa usando cebadores específicos para el espaciador intergénico entre los genes ribosómicos 16S y 23S. Del estudio se obtuvo que la cepa Q5-3 identificada como Lactobacillus plantarum, produjo 1.535 g/L de EPS y presento la mejor producción de EPS con glucosa a pH 5.5 y 30°C. La obtención de una cepa de Lactobacillus plantarum productora de EPS es un aporte valioso ya que le da un valor agregado a las distintas propiedades ya conocidas de este microorganismo tan utilizado en la industria alimentaria.

-- The purpose of the present study was to obtain some original lactobacillus from Perú which had be producers of exopolysaccharide of biotechnology importance with a potential utility to industry as natural biothikeners, improving the rheological properties of the products. To achive this purpose, 30 samples were taken from fermented foods and native nature source, obtaining 15 isolated producers of exopolysaccharide (EPS). Then, 5 isolated were selected because they produced the higher quantity of EPS. All isolated selected were grown to several condition such as temperature, pH and source of carbone. It was found that in some cases the optimus condition of production was different from growth. The isolated were identified by biochemistry and phenotypic traditional methods. In addition, molecular tools as PCR (polimerase chain reaction) were also used to identify the isolated. It was found that the Q5-3 strain, identifying as Lactobacillus plantarum, produced 1.535 g/L of EPS. This strain had the best production of EPS (with glucose) as pH 5.5 and 30°C. The discovery of the Lactobacillus plantarum producer strain of EPS is an important contribution because it provides an addition value to this well-known microorganism. -- Key words: lactic acid bacteria, lactobacilli, intergenic spacer 16S-23S, exopolysaccharides.
