The food industry is a primary sector worldwide and its constant growth places it in a privileged position. The population is projected to reach 9.7 billion by 2050, giving this industry the responsibility of meeting the basic needs of an increasing number of individuals. From the diagnosis obtained from the case study, a reduction in production capacity was evident compared to previous years. In response to this situation, we seek to increase the current productivity of 25.8 Kg/h-h. Low productivity continues to be a big problem in SMEs in Latin America, given that relative productivity with respect to the United States is approximately 20%. The case study focuses on the packaging area, because at this point the critical bottleneck was identified, given the new packaging requirements given by the company's main client. These new requirements respond to the client's quest to simplify their supply chain, a need that arose in response to the challenges caused by the pandemic. To solve the problem, an implementation model of the Lean Manufacturing methodology is proposed with the purpose of increasing productivity and efficiency in the packaging area. To do this, tools of this methodology are applied such as Value Stream Mapping (VSM), Work Standardization, Systematic Layout Planning (SLP), and 5S. Through the application of the improvements presented, a productivity level of 31.5 Kg/h-h was achieved.
