In this project, we address the case of a small and medium-sized enterprise (SME) in northern Lima called Grupo Rodrigo, which is dedicated to the processing and sale of meat—a sector experiencing growth in the Peruvian market. This company faces storage process issues due to the perishability loss of its flagship product: beef, with nearly 16% wasted in the warehouse, a rate significantly above the industry standard. The costs associated with this problem represent approximately 7% of its annual revenue. Three main causes of the waste were identified: inefficient production scheduling, non-rotating products in process, and unprocessed raw materials. After conducting a thorough analysis that included company visits, review of operational flows, staff interviews, and record verification, it was determined that the solution model for this issue should include components such as lean manufacturing tools (Kanban and 5S) and accurate demand forecasting. Finally, after strategic implementation and validation, a positive result was evidenced in management, resulting in a reduction of waste in the warehouse and, consequently, an increase in the company's profitability for the remainder of the current year and in the future.
