In 2022, production in the Peruvian baking sector increased by 9%. Currently, annual per capita consumption is 30 kg, however, there are neighboring countries that triple this value, such as Chile, which currently has this annual value of 96 kg. This means an opportunity for the growth of the production of products in the baking sector. However, in that same year, six hundred bakeries closed operations, due to the increase in prices of raw materials, and the decrease in operating margins on their sales. Because of this, productivity is a crucial indicator for proper management of operations in a bakery. The present work consists of analyzing the productivity in the production line of French bread in an SME bakery, where it was identified that the current productivity is 64.30%, this being a figure lower than that proposed by its competitors 75.50%, this being the objective to overcome in this project. This low productivity is caused by the time spent searching for work utensils, unnecessary routes for raw materials and the existence of defective products. Given this, a model is proposed in which it integrates the 5S, Poka Yoke and Systematic Layout Planning (SLP) tools with the objective of increasing productivity in the aforementioned production line. After validating the improvement model, a reduction in times spent on transfers and the number of defective products was obtained from 64.06% to 71.20% respectively, consequently, productivity increased from 64.30% to 70.06%.
