This professional proficiency work deals with the reduction of wastage in a company in the chocolate sector. This company has a wide range of products among which bitter bars, chocolate drops and white bars stand out due to their higher market demand and therefore higher income. However, the company's profits are affected by the high rate of wastage on the production lines. The main objective is to minimize wastage by implementing some Lean Manufacturing tools. In the first chapter, a background and theoretical framework is established to explore the methodologies employed. The second chapter details the organization, processes and statistics. It also identifies the causes related to wastage. This situation is mainly due to spillage in the storage tanks due to exceeding their capacity, waste due to the finished product falling to the ground, variability in parameters and spillage due to mass transfers in jabas. The third chapter presents the engineering proposal and details the implementation. It focuses on using jidoka tools, poka yoke and standardised work. Indicators were designed to measure the success of the solutions and the budget was analysed. Indeed, the solution model implemented allowed to reduce the shrinkage rate to 3.93%, which reduced the monetary losses by 3.78%. In addition, a positive Net Present Value was obtained and a return in less than one year. Therefore, the project is viable and the implementation of the tools reduced shrinkage and improved operational efficiency.
