Introduction: Worldwide, the consumption of ultra-processed products has been increasing, and in some cases, it has started to move natural and fresh foods from meals. Moreover, when the nutritional profile of these products is evaluated, it is observed that they provide low nutrient content and higher levels of non-natural ingredients. Consequently, the Pan American Health Organization (PAHO) reports that the sale of ultra-processed products is one of the main causes of degenerative diseases and health complications (PAHO, 2019), including sleep quality issues. Objective: To determine the relationship between the consumption of ultra-processed products and sleep quality in health professionals after confinement during the Covid-19 in Lima, Peru 2023. Materials and methods: This study is descriptive, observational, and cross-sectional nature. The sample consisted of 609 healthcare professionals, including medical doctors and nutritionists. The variable “Consumption of ultra-processed products” was measured using the Food Consumption frequency instrument, and for the variable “Sleep Quality”, the Pittsburgh Sleep Quality Index, Colombian version, was used. The relationship between variables was analyzed using the chi-square test. Results: A statistically significant association was found between age (p<0.001), marital status (p<0.001), workplace (p<0.001), and sleep quality (p<0.001). Additionally, it was observed that those with high consumption of ultra-processed products had a 4.28 times higher probability of experiencing poor sleep quality compared to those with low consumption of ultra-processed products (Adjusted OR: 4.28, 95% Confidence interval: 2.80, 6.66; p<0,001). This result was adjusted for sex, age, marital status, type of work and workplace. Conclusions: A statistically significant association was found between the consumption of ultra-processed products, age, marital status, workplace, and sleep quality. High consumption of ultra-processed products is associated with 4.28 times higher likelihood of poor sleep quality.
