The present work proposes an automatic temperature control system of an autoclave for the stabilization of organoleptic parameters such as taste, color, texture, smell and of high bromatological value, and, at the same time, guarantee pathogen mortality after the sterilization process. Although the mentioned parameters cannot be controlled directly, an alternative solution is to control the thermal lethality time (F0), which according to previous studies has a direct relationship with the stabilization of the mentioned characteristics. The proposed system is made up of a stage for detecting the internal temperature of canned goods and another for the internal cavity of the oven. It also has a steam flow controller at the oven inlet for thermal regulation inside the autoclave. An algorithm of temperature control was implemented over the controller which takes like reference the F0 for parameter stabilization and clostridium botulinum elimination. Both sample types were subdued to the corresponding studies of control. The results show that the automatic system guarantees temperature control. Furthermore, it complies with the time standards of thermic lethality of 121,1°C by 2,4min.
