The objective of this project is to reduce accidents in the meat and poultry area of a Peruvian supermarket chain. The company is one of the most important actors of retail sector in Perú. Currently, it presents problems in his management of the occupational health and safety system, evidenced in an accident rate of 11.07 number of accidents/ number of workers, a higher rate compared to similar companies in the local market. For the identification of the problem, the statistical data of accidents and medical breaks for the period 2016 to 2020 are analyzed through Pareto diagrams, the results indicate that the meat and poultry area present 19.66% of accidents in supermarkets, the highest compared to others areas, therefore it is chosen to make the improvements in this area. The implementation of Lean Manufacturing tools, such as TPM - Autonomous and Planned Maintenance, 5S, Kanban and Poka Yokes. The validation of the proposals is carried out through tests and pilot plans applied to a group of stores with critical accident rates, achieving improvement results in an expected scenario for the reduction of medical breaks in the implementation of autonomous and planned maintenance of 80.95%, for the 5S methodology 67.57%, with the Kanban proposal 9.90% and in the implementation of poka yokes an average improvement of 98.19%.
