Objective: Validate the nutritional recipe of a breaded bite based on grains, vegetables and a legume with the incorporation of Nostoc commune, based on the CENAN methodology: proximal composition, calcium and vitamin D content. Method: Cross-section experimental laboratory study, which consisted of 7 stages from the proximal analysis of cushuro, to the proximal analysis and microbiological characterization of the final nutritional recipe. The CENAN methodology was used for the design and validation of the nutritional recipe. Results: The total content of energy, carbohydrates, proteins, fats, moisture and fiber in Nostoc commune, from Ancash, were as follows: 9.5 kcal, 0.7 g, 0.9 g, 0.1 g, 98 g and 0.0 g, per 100 g of sample. A high acceptability regarding the flavor, color, texture and aroma of the nutritional recipe was observed, the texture being the most favorable characteristic followed by the flavor. Regarding the nutritional content of the adjusted nutritional recipe: 129.3 kcal, 20.0 g of carbohydrates, 7.6 g of protein, 2.1 g of fat, 219.3 g of calcium and 0.08 ug of vitamin D, were evidenced in 100 g of the sample. Additionally, it was found that microbiological results of the nutritional recipe were below and within the acceptable limits. Conclusions: The incorporation of cushuro into a breaded bite showed a high organoleptic acceptability, in addition to proving to be an innovative and functional ingredient.
