This work proposes a mechatronic system oriented to the extraction of the shell of the aguaymanto. The proposed system aims to reduce the time for shelling the fruit, which is currently done manually. The idea is to expand the production and maintain product quality standards. The proposed system consists of a mechanical distribution and ordering system by vibration in a sieve, which aims to position the product using mechanical filters, being finally ordered and distributed in six production lines. Likewise, it consists of a transport system and alignment before the peeled. This one is responsible for varying the position of the aguaymanto until it is entered into the shell extraction system. In case the orientation is not correct, the extraction unit together with the lateral alignment system will locate the ideal position of the aguaymanto for extraction. For the validation process of the system, the number of fruits processed per unit of time and the quality of the product obtained were taken into account. In this case, a rate of 0.5 kg / min and a percentage of correctly shelled fruits of 93.8% were obtained. Both performance measurement parameters are within the range of values established by the production companies, the rate being a scalable value directly proportional to the number of production lines.
