The effect of the addition of three concentrations (0.10, 0.15 and 0.20%) of xanthan gum on titratable acidity, color, viscosity and general sensory acceptability in a mixed nectar of passion fruit (Passiflora ligularis) Colombian variety and carambola (Averrhoa carambola L.) Golden Star variety were investigated. Sensorially, general acceptability was evaluated with thirty untrained judges, using a nine point hedonic scale. The statistical analysis were performed to a 95% level of confidence. The modified Levene test demonstrated homogeneity of variances for the parametric variables and the analysis of variance showed significant differences (p <0.05) in the apparent viscosity, which increased when increasing the concentration of xanthan gum, likewise, there was a significant effect (p <0.05) in color, while titratable acidity had no significant effect (p>0.05). Duncan’s test determined that the concentration to determine the best viscosity and color was the treatment X1 (0.10% xanthan gum). Friedman's test indicated that there is no effect (p> 0.05) on overall acceptability; but that the concentration of xanthan gum at 0.10% presented the best average of 6.87 points and a mode of 7 points.
