In the present investigation, the impact of partial replacement of pre-cooked pea flour with pre-cooked tarwi flour (0 and 10%) and the addition of turmeric powder (0.1, 0.3 and 0.5%) in a dehydrated soup was evaluated. The results denoted significant effects on the protein content, crude fiber and solubility index, while there was no significant effect on the absorption index. To evaluate general acceptability, statistical analysis was applied using the Friedman test, which denoted that there is no significant difference between the different treatments, but T1 is considered the most accepted by the panelists because it has the highest numerical value of mode 9 and average 8.60 points, in addition to 12.55% protein content, 4.39% crude fiber, 4.27 g/g sample water absorption index and 9.25% solubility index.
