It was studied the effect time of ultrasound waves on the soluble solids, percentage of acidity, vitamin C and aerobic plate counts of common camu camu pulp (Myrciaria dubia) Different samples of fresh pulp were characterized and subjected to ultrasound waves independently, using a 1 x 4 factorial design with 4 replications and one factor used time (0 (control), 15, 30,45, and 60min). The results obtained showed that the time of exposure to treatment with ultrasound waves have a significant effect (α=0.05) on the properties studied. The most significant effects are demonstrated by applying an exposure time of 30min; such as maintenance of vitamin C, the% acidity, soluble solids, and mesophile counts; however 60min at 45 and it was noted a decrease in vitamin C (50%), increased soluble solids content (57%), no significant difference with respect to aerobic plate count . Values were maintained according to the control sample. This study provides advances in the application of non emerging technologies in food preservation.
