There was studied the effect combined of the concentration of three hidrocoloides: CMC, rubber guar and rubber xantana, on the rheological characteristics, syneresis, instrumental and sensory consistency and general acceptability of pasta untable of olive (There flutters European L.) Sevillian variety a design of mixtures being applied simplex reticulated with centroide. To establish the effect combined of the concentration of hidrocoloides extended. The effect combined of CMC, rubber guar and rubber xantana influenced significantly (p <0,05) in the syneresis, coefficient of consistency (K) and instrumental consistency of the pasta untable of olive, sensory consistency and general acceptability mas not in the rheological index of the same one.. In all the treatments there was demonstrated a not Newtonian behavior of pseudoplastic type by a value of rheological index ““n““ minor to 1 (0.07 - 0.37) and coefficient of consistency ““k““ in the range of 28.05 - 77.28 Pa.sn. The variables that adjusted to a mathematical quadratic model were the index of consistency and the instrumental consistency, whereas the syneresis adjusted to a linear model. The levels of hidrocoloides CMC 0.068 %; GG 0.073 %; GX 0.859 % optimized (maximized) the coefficient of consistency (57.17 Pa. sn), (minimizanron) the syneresis (0.067 %) and the instrumental consistency (0.05 cm/s) in the pasta untable of olive. The treatment T10 (CMC 0.17 %; GG 0.17 %; GX 0.67 %) allowed to obtain the pasta untable of olive with minor syneresis, better rheological characteristics, instrumental consistency and major general acceptability, nevertheless the above mentioned treatment in sensory consistency presented a mode of 5, which represents one ““ neither pleases me nor displeases me ““ in the scale hedonistic.
