The effect of Moscatel Italia grape (Vitis vinifera) fiber as a pork fat substitute and the scalding temperature on moisture, color, firmness and general acceptability in Viena sausage was studied. Grape fruits were obtained from the Hermelinda Market – Trujillo; their skins were dried and milled to get flour. 5, 10 and 15% Grape skins flour substitution and two scalding temperatures (75 and 85 °C) were tested. ANOVA showed a significant effect of independent variables on color and firmness in Viena sausages; there was not significant effect on moisture content. Duncan test showed that 5, 10 and 10% grape skins fiber substitution and 85 °C gave the highest firmness and the best a* color value (intermediate reddish); furthermore, 5% grape peel flour and 85 °C showed b* color value closest to the control sample. Friedman test showed significant effect of independent variables on the sausages general acceptability. Wilcoxon test did not evidence differences among treatments; however, the 10% grape peel fiber fat substitution and 85 °C scalding sample obtained the best acceptation of sensory judges, with points mode and one average rank of 5.10.
