The objective of this research was to evaluate the effect of substitution of wheat flour Triticum aestivum seed flour bread tree (breadfruit) on the ash content, firmness, color and overall acceptability cookies. The edible part of the seed bread was used. Three substitutions seed meal bread shaft (5, 10 and 15%), plus a cookie control without replacement, which were carried to an industrial oven to 140 ° C was used for eight to making cookies, minutes. For statistical analysis the Levene test, ANOVA and Duncan test for parametric variables was applied. As for overall acceptability, the Friedman With respect to ashes and color, there was significant difference (p <0.05) among the replacements. As to the firmness significant difference (p <0.05) was found between replacements; and biscuit 10% substitution had the lowest strength. Regarding overall acceptability, there was significant difference (p <0.05) between the substitutions and determined that the cookie with 15% substitution was the one with the greater acceptance by the panelists.
