Objective: To determine whether food intolerance is a factor associated with mortality in intensive care patients with mechanical ventilation who received enteral nutrition at Hospital Belén de Trujillo. Material and Methods: An analytical, observational, retrospective study of cases and controls was carried out during January 2010 to December 2016. The sample consisted of 63 patients, 21 died and 42 survivors. Results: The average age of 63 patients targeted was 53.46±18.78 years old, of which 55.6% were of the male gender, the use of sedatives was 100%, hyperglycemia was identified in 6.3%, the average hospital stay was 18.95 ± 17.96. The overall frequency of food intolerance was 34.9% (22 patients). Food intolerance was more frequent in cases than in controls, with 61.9% (13 patients) versus 21.4% (9 patients) respectively, with a highly significant statistical difference (chi2 = 10.09, p = 0.0015, OR = 5.96, 95% CI = 1.89-18.79). The average age (58.6 ± 14.9 and 50.9 ± 18.6, p = 0.10), male (47.6% and 52.4%, p = 0.37), the medical diagnosis at admission (57.1% and 61.9%, p = 0.71) and the mean hospital stay (19.7 ± 16.3 and 18.6 ± 18.9, p = 0.82), showed no statistically significant difference between cases and controls, respectively. Conclusions: Food intolerance is a factor associated with mortality in patients of the intensive care unit studied up to 5.96 times more. Early identification of food intolerance manifestations is suggested based on the proposed parameters and to expand the identification of this variable in multicenter studies.
