The effect of maturity index was evaluated and forthe pretreatment performance, degree of esterification, degree of gelation and apparent viscosity of pectin extracted from tangerine peel (Citrus reticulata) var. W. Murcott, from the valley of Chao. The raw material was weighed, selected and classified according to the maturity index (9.89 and 12.49), he underwent a pre-treatment (with and without hydrodistillation extraction of essential oil); pectin extracted by acid hydrolysis, then passed through the filtration operations, precipitation, drying and milling. Statistical analysis was performed with a confidence level of 95%. Levene test for homogeneity of variance showed the variables studied. The analysis of variance indicated significant effect of maturity index and the pre-treatment in the response variables. Duncan test determined that the IM (maturity index 9.89 and hidrodestilación), treatment had the highest yield of pectin. Likewise, treatment IM 1 T (9.89 maturity index and without hydrodistillation) provided the best physicochemical characteristics with degree of esterification of 59.5%, degree of gelation of 151°SAG and apparent viscosity 68.1 mPa.s 1 1 T 2
