The effect of the substitution of wheat flour (3, 6, 9%) by quinua flour (Chenopodium quinoa) on the protein content, color (L*, a*, b*), firmness, and general acceptability in chicken nuggets was evaluated. With the analysis of variance showed a significant effect (p<0.05) of the substitution of wheat flour by quinua flour on the protein content, color parameters (L*, b*), and firmness. Nuggets made with the substitution of 9% of wheat flour gave the highest protein content (28.95%); 3 and 6%, the best firmness (2.38 and 2.43 N, respectively); 3%, the best luminosity L* (44.43); and 6%, the best value of b* (26.67). Regarding to general acceptability, Friedman and Wilcoxon test showed significant difference (p<0.05) among treatments. The substitution of 6% of wheat flour showed the highest general acceptability with 3.46 as average range and 7 points as mode, belonging to the perception of “I like it moderately“.
