It was evaluated the effect of the proportion of fat: quinoa flour (Chenopodium quinoa): carrageenan Lambda (0:0; 2:1; 4:1,25 y 6:1,5%) about the texture, color, and general acceptance with regards of the Frankfurter chicken sausage. The quinoa flour and the carrageenan Lambda were added in concentration ratios of 0:0; 2:1; 4:1,25 y 6:1,5%, respectively. By raising the quinoa flour and carrageenan concentrations in the sample, the texture values raised from 1,44 to 2,30 N. With these values it was seen homogenous (o homogenity) in the modified Levene test and significative difference (p<0,05) in the Varianza analysis. The same applies to the Duncan test. In the other hand, the color parameters L* and a* slightly lowered showing homogenous (o homogenity) in the modified Levene test. Also, in this trial there were some differences in the Varianza analysis and the Duncan test –m while b* raised it’s levels from 7,87 to 10,10 showing homogenity in the modified Levene test with great significative difference in the varianza anaysis and the Duncan test. The Duncan test was implemented in order to determine the best results of the texture variables and the color a* parameter was the F1 formula (2,0% quinoa flour and 1% carrageenan). For the L* color parameter, the best results was for the F2 formula (4,00% quinoa flour and 1,25% carrageenan). Regarding the b* parameter, the best result was for the F3 formula (6,00% quinoa flour and 1,50% carrageenan). The judges of this trial reported that the F1 formulation (2,00% quinoa flour and 1,00% carrageenan) gave the best results for the sensory texture in a scale of 6 (slightly firm), the same applies to general acceptance of a score of 7 (Moderately accepted), showing signficative differences in the Friedman and Wilcoxon tests(p<0,05).
