The physicochemical properties of oils extracted from seeds depend on the type of solvent used with the Soxhlet method. The aim of this study was to evaluate the effect of boiling point range of petroleum ether on the yield and the physicochemical properties of the extracted oil of peanut (Arachis hypogaea L.) grains, which were dried in the oven at 60 °C to constant weight (5,2% moisture); then, they were subjected to oil extraction by Soxhlet method using petroleum ether fractions with different boiling point ranges (40-50, 50- 60 and 40-60 ° C). In the extracted oil, the yield and the indexes of peroxides, of iodine, of acidity, and of refraction were determined, as well as, the photometric color index. Four repetitions were carried out for statistical analyzes; and the Levene test, analysis of variance, and Duncan test were applied. The oil extracted with petroleum ether with boiling point range of 50-60 °C showed the best indexes values of the yield (57.0%), of peroxides (4.54 meqO2/kg), of iodine (101.1 gI2/100g), of acidity (0.65% oleic acid), and of refraction at 25 °C (1.4632); as well as, the photometric color index (7.0383). All results show that the extracted oil can be used in food applications.
