The aim of this research was to evaluate the effect of substitution of wheat flour (Triticum aestivum) by purple prickly pear (Opuntia indica) flour on ash content, hardness, color, and general acceptability in sweet cookies. The edible portion of fresh prickly pear was used, which was oven dried to 12% moisture and, then, converted in flour. To prepare the cookies, three substitutions of prickly pear (5, 10, and 15%) flour were used, plus a control cookie without replacement, which were taken into an industrial oven at 140 °C for eight minutes. For statistical analysis, four replicates were carried out, and Levene test, analysis of variance, and Duncan test were performed. Regarding to general acceptability, Friedman and Wilcoxon tests were used, in case of finding significance. With Levene test, homogeneity of variance of parametric variables was determined, except a* parameter of color. Regarding to the color and ash content, significant difference (p < 0,05) among the substitutions was found. With respect to the hardness, significant difference (p < 0,05) among the substitutions was found, and the cookie with 5% of substitution gave the lowest hardness. For the general acceptability, there was significant difference (p < 0,05) among the substitutions, and the cookie with 5% of substitution had the highest acceptance by the panelists.
