The objective of the research work is to study the work methods of the screening process to increase productivity in the wheat flour line in the company Cogorno S.A. which produces noodle flour and bread flour. During the production process there are stops for various reasons such as maintenance, mechanical failures, electrical failures or to change the production batch from pasta flour to baking flour or vice versa, the Plansifter sifters must be changed, causing unproductive times in both machine hours. such as man-hours failing to comply with scheduled production and low productivity in relation to the standards of similar companies and certainly economic losses. The current average production is 3362.64 mt of wheat flour per month. Through the application of Lean Manufacturing tools such as the five whys and the Pareto diagram, it was found that the mesh change operation in Plansfinter caused the greatest waste, determining that the redesign of the production flow line is the best economic alternative. to avoid production stops. It was found that the main cause of unproductive times is the operation of changing meshes in the screening stage with 86.75% and the percentage of unproductive times that are currently generated is 13.87%. The estimated production by redesigning the production line allows an increase in average monthly production of 3669.49 tons of total flour. Comparing with the previous method, labor productivity has increased from 0.9238 to 1.0081 mt of wheat flour for each man hour used, that is, it rose 9.13%. Productivity in monetary terms increased by 9.21% compared to the previous method, that is, from 0.1086 tm/sol invested, it was increased to 0.1186
