The present work aimed to determine the effect of plukenetia volubilis “sacha Inchi” on the concentration of LDL cholesterol in Cavia porcellus “cuy”. The following experimental research was carried out, designed by Solomon in the laboratory of the Antenor Orrego de Trujillo Private University. For the execution of this research work 16 cavia porcellus “cuy“ of approximately 4 months of age were used for the experimental treatment. We work with 4 groups, composed of 4 Cavia porcellus “cuy”, the treatment consisted of administering the sacha inchi oil orally daily to each group for 30 days in different doses in which the hypolipidemic effect of sacha inchi oil was determined through blood cholesterol (LDL) samples. The amounts of LDL-total cholesterol in cavia porcellus serum before consumption of Plukenetia Volubilis “sacha Inchi” oil was 87.56 to 82.43 with a standard deviation of 5.71 to 2.24. The amounts of LDL-total cholesterol in cavia porcellus serum after consumption of Plukenetia Volubilis “sacha Inchi” oil, were 87.56 to 55.11 with a standard deviation of 4 to 3.76. The effect of Plukenetia Volubilis “sacha Inchi” oil was detected in group 4 where the dose was 1.5 ml and it has high statistical significance demonstrating the effect of LDL cholesterol decrease, with a significant statistic of <0.001. At the conclusion of the treatment, we can say that the experimental group obtained adequate differences with the results we have shown at the beginning of the investigation. Therefore, the results are the decrease in LDL cholesterol levels. Finally, we can corroborate the consumption of sacha inchi oil, achieve the decrease of hypercholesterolemia in Cavia porcellus “cuy
