The effect of native corn starch (Zea mays L.) with and without coating and the drying temperature (55 and 65 ° C) on the content of vitamin C, color (L*, a* y b*), phenolic compounds, firmness, crispness and general acceptability in Red Bell pepper snack strips was evaluated. Sensory analysis was applied to crispiness and general acceptability, using a 9-point hedonic scale. Treatment with coated? native starch with coating and drying temperature of 55 °C produced the best vitamin C values, (71.23 mg of ascorbic acid / 100 g sample); higher color (54.14 L*, 18.27 a*, 11.32 b*), highest content of phenolic compounds (4.19 mg gallic acid / g sample), highest crispiness (8 points) and 9 points in general acceptability, equivalent to “I like it very much ”In the Red Bell pepper snack. Therefore, with the native corn starch coating and the drying temperature at 55 °C, the physicochemical and sensory characteristics of the Red Bell pepper snack were maintained adequate
