This research was carried out in in the village of Vaqueria, Agallpampa district, Otuzco province, at an elevation of 3200 meters above sea level, from September 2014 to May 2015. Objectives of this study were: a) study the effect of fertilization and planting density on the production of sugar beet (sugar and fodder); b) develop appropriate technology to find the level of adaptability to the high Andean area, where most crops do not achieve economic productions. To achieve this, an experiment with three crop densities of 100 thousand plants per hectare, 150,000 plants per hectare and 200,000 plants per hectare were installed. Additionally, there were three doses of nitrogen: 20 kg N ha-1 , 120 kg N ha-1 and 220 kg N ha-1 . It was found that in the Andean high zone (Humid Subtropical forest Montano), sugar beet produced yields between 21.69 and 68.41 t. ha-1 and obtained optimal quality features such as its Sucrose (from 14.2 to 17.7%), Brix (from 15.8 to 20.4 degrees), Purity (from 83.78 at 87.12%) for production of sugar or alcohol; and also yields of leaves and crowns (between 5.77 and 41.93 t ha-1 ) which are used for livestock feed. A statistical analysis between densities and nitrogen doses found that optimum density is 180,000 plants per hectare with an nitrogen optimum dose of 220 kg N ha-1
