The effect of 40 KHz ultrasound exposure time (0, 5, 10 and 15 min) on the pH, texture (firmness, elasticity and cohesion), count of aerobic mesophilic bacteria, Escherichia coli and Staphylococcus aureus in steak of pota was studied. The results obtained through the analysis of variance showed that the time of exposure to the treatment with ultrasound waves had a significant effect (p <0.05) on the firmness, elasticity, cohesion, mesophilic aerobic bacteria count, Escherichia coli count, counting of Staphylococcus aureus and had no significance on pH. It was determined that the time of exposure to ultrasound with frequency at 40 kHz to 15 min allowed to obtain the lowest variation of pH (6.17), elasticity (0.68 N), cohesion (0.58 N) and reduced the microbial load for the bacterial count Mesophilic aerobic (1.9x10 5 cfu / g) but was not met for Escherichia coli (1.7x10 cfu / g) and Staphylococcus aureus (1.9x10 3 cfu / g) according to the Digesa Norm for hydrobiological products, and with an exposure time of 5 min it was possible to maintain the firmness (27.30 N) in the steak of pota. 2
