The effect of replacing rice flour (Oriza sativa) with green plantain flour (Musa paradisiaca) (30 and 50%) and quinoa flour (Chenopodium quinoa Willd) (20 and 25%) on protein content was evaluated. color, firmness and general acceptability in gluten-free sweet biscuits. Statistical analysis for all variables was performed at a 95% confidence level. The homogeneity of variances in the parametric variables was demonstrated with the Levene test (p>0.05). The analysis of variance indicated a significant effect of green plantain flour and quinoa flour on firmness, protein content, lightness (L*) and a* chromaticity; while, for chromaticity b*, there was only an effect in quinoa flour. It was determined that the treatment of 30% green plantain flour and 25% quinoa flour presented the highest protein content; the treatment 50% green plantain flour and 25% quinoa flour presented the best firmness and in the case of the treatment 50% green plantain flour and 20% quinoa flour presented the best luminosity 60.82, chromaticity a* 5.66 and chromaticity b* 31.27. The Friedman test indicated a significant effect for green plantain flour and quinoa flour on the general acceptability of sweet cookies, while the Wilcoxon test denoted that the treatments 50% green plantain flour, 20% quinoa flour and 30% green plantain flour, 25% quinoa flour were the best in general acceptability, with a perception of I like it very much and a score of 7.77 and 7.50 points, respectively.
