The effect of the addition of moringa leaf extract (5, 10 and 15%) and powdered blueberry residues (1, 3 and 5%) on crude fiber content, phenolic compounds, instrumental firmness and general acceptability in gummy candies was evaluated. Statistical analysis for all variables was performed at 95% confidence level. Homogeneity of variances in the parametric variables was demonstrated with Levene's test (p>0.05). Analysis of variance indicated a significant effect (p<0.05) of moringa leaf extract and powdered blueberry residues on crude fiber content, phenolic compounds and instrumental firmness. It was determined that the addition of moringa leaf extract at 15% and powdered blueberry residues at 1% presented phenolic compounds content (21.54 mg gallic acid/100 g). Duncan's test also determined that it presented firmness (3.30 N) and crude fiber content (2.31%). The non-parametric Friedman's test determined a significant effect of the addition of moringa leaf extract and powdered blueberry residues on the general acceptability. Duncan's multiple comparison test determined that the best treatment was the addition of 5% extract of moringa leaves and 5% powdered cranberry residues, which presented the highest contents of total phenols (47.84 mg GAE/100 g), crude fiber (4.50%) and firmness (6.14 N). Additionally, it denoted an average general acceptance of 6.18 points on average, which is equivalent to a perception of “I like it slightly“.
