The effect of the mixture of salt (0-2%), gelatin (0-2%) and yellow chili pepper (Capsicum baccatum L. var. pendulum) in pulp (12-14%) on acidity, syneresis, viscosity was investigated. apparent, color, antioxidant capacity, lactic acid bacteria count and general acceptability (color, odor, consistency and flavor) of probiotic yogurt, using the Simplex Mixture Design with Expanded Centroid, corresponding to the response surface methodology and a superposition of contour graphs that found the optimal operating zone for the yogurt making process. Balanced incomplete block design was applied for sensory evaluation. It was found that the mixture of salt, gelatin and yellow chili pepper presented a significant effect p≤0.05 for acidity, syneresis, apparent viscosity; as well as, the sensory attributes of color and flavor of general acceptability for probiotic yogurt. It was determined that the optimal combinations to obtain the lowest acidity (0.93%) and syneresis (46.25%), best apparent viscosity (3626.31 mPa.s) in addition to the highest average in sensory color (6.1 points = “I like it slightly”) and flavor sensory (4.75 = “I neither like nor dislike”) were the mixture of 0.27% salt, 0.77% gelatin and 12.96% yellow chili pepper in probiotic yogurt.
