The objective of this research work was to improve the productivity of PANADERÍA YOINER through the application of an inventory management model. First, a population of 13 types of bread and the demand of 10 supplies of raw material for the production were analyzed. In addition, sales income for the 2020 period was obtained for each type of bread. In the diagnosis, the independent variable was the inventory management system and the dependent variable was the productivity. Once the independent and dependent variables were determined, the cost of raw material inventory management was obtained, it was S/ 242,999.77; and the sales income for the 2020 period was S/ 947,084.72; the productivity for the 2020 period was 3.90. After making the diagnosis, the coefficient of variation of the 10 inputs that made up the raw material for the production of bread was analyzed, which were between 20 and 30%, then, the inventory management model proposal was the model periodic review. Likewise, the sales forecast and the demand forecast for each raw material input for the period 2021 were made. To find the most accurate demand forecast we applied six types of projections and then, we obtained the average absolute error for each one, selecting the forecast with the lowest absolute error for each raw material input. Then, the periodic review model was applied to the raw material demand forecast for the 2021 period, with a total productivity of 4.22 and an increase of 8.2%. Finally, it is concluded that the periodic review model applied to inventory management increased the productivity of the following period in relation to the diagnosis phase, likewise, it increased the profitability of PANADERÍA YOINER
