Aplicación de un modelo de gestión de inventarios para mejorar la productividad de la empresa Panadería Yoiner Piura 2020

Abstract

El presente trabajo de investigación tuvo como objetivo mejorar la productividad de la PANADERÍA YOINER mediante la aplicación de un modelo de gestión de inventarios Primero, se analizó a una población de 13 tipos de panes y la demanda de materia prima para la producción de panes, los cuales eran un total de 10 insumos; además, se registró el ingreso por ventas del periodo 2020 por cada tipo de pan. En el diagnóstico se determinó que la variable independiente era el sistema de gestión de inventarios y la variable dependiente era la productividad. Una vez determinadas las variables independiente y dependiente, se obtuvo el costo de gestión de inventarios de materia prima, el cual fue de S/ 242,999.77; y el ingreso por ventas del periodo 2020, el cual fue de S/ 947,084.72; la productividad del periodo 2020 fue de 3.90. Después de realizar el diagnóstico, se analizó el coeficiente de variación de los 10 insumos que conformaban la materia prima para la producción de pan, los cuales estuvieron dentro del 20 y 30%, entonces, la propuesta de modelo de gestión de inventarios fue el modelo de revisión periódica. Así mismo, se realizó el pronóstico ventas y el pronóstico de demanda de cada insumo de materia prima para el periodo 2021; para hallar el pronóstico de demanda más preciso, se aplicaron 6 tipos de proyecciones y se obtuvo el error absoluto medio de cada uno, quedando seleccionado el pronóstico con menor error absoluto por cada insumo de materia prima. Luego, se aplicó el modelo de revisión periódica al pronóstico de demanda de materia prima del periodo 2021, teniendo como productividad un total de 4.22 y un incremento de 8,2%. Finalmente, se concluye que el modelo de revisión periódica aplicado a la gestión de inventarios incrementó la productividad del periodo siguiente en relación a la fase del diagnóstico, así mismo, incrementó la rentabilidad de la PANADERÍA YOINER.

The objective of this research work was to improve the productivity of PANADERÍA YOINER through the application of an inventory management model. First, a population of 13 types of bread and the demand of 10 supplies of raw material for the production were analyzed. In addition, sales income for the 2020 period was obtained for each type of bread. In the diagnosis, the independent variable was the inventory management system and the dependent variable was the productivity. Once the independent and dependent variables were determined, the cost of raw material inventory management was obtained, it was S/ 242,999.77; and the sales income for the 2020 period was S/ 947,084.72; the productivity for the 2020 period was 3.90. After making the diagnosis, the coefficient of variation of the 10 inputs that made up the raw material for the production of bread was analyzed, which were between 20 and 30%, then, the inventory management model proposal was the model periodic review. Likewise, the sales forecast and the demand forecast for each raw material input for the period 2021 were made. To find the most accurate demand forecast we applied six types of projections and then, we obtained the average absolute error for each one, selecting the forecast with the lowest absolute error for each raw material input. Then, the periodic review model was applied to the raw material demand forecast for the 2021 period, with a total productivity of 4.22 and an increase of 8.2%. Finally, it is concluded that the periodic review model applied to inventory management increased the productivity of the following period in relation to the diagnosis phase, likewise, it increased the profitability of PANADERÍA YOINER
