The effect of the addition of orange pulp residue powder (Citrus X sinensis) or blueberry (Vaccinium corymbosum L.) (0.5 and 1.00%) and concentrations of probiotic bacteria (3.00 and 5.00%) on the physicochemical, microbiological and acceptability characteristics was evaluated. general in ice cream type. In the analysis of overrun, melting time, apparent viscosity, crude fiber and probiotic bacteria, the modified Levene test was applied (p> 0.05), there being homogeneity of variances; analysis of variance (p <0.05), there being a significant effect and the Duncan test, taking as best treatment of probiotic bacteria 3% and blueberry peel 0.5% with a value of 98.48 %, an adequate fusion value of 26.96% and better apparent viscosity with a value of 206.32 mPas.s, for crude fiber a value of 2.85% and for probiotic bacteria a value of 1.38x106 cfu/mL In the general acceptability test, the Kruskal-Wallis statistical test was used, there was no significant difference with a trend of 8.
