The effect of the partial substitution of sucrose by stevia (40, 70 and 100%) and of CMC by chia mucilage powder (50 and 100%) on titratable acidity, soluble solids, apparent viscosity, fungi and yeasts, appearance and general acceptability in a tamarind drink was evaluated. For the sensory analysis, we worked with 30 untrained panelists. The Levene test demonstrated homogeneity of variance for each parametric variable and the analysis of variance indicated a significant effect (p<0.05) of the independent variables on the titratable acidity, soluble solids, and apparent viscosity, with the exception of the count of fungi and yeasts. For the sensory evaluations, the Friedman test determined the significant difference (p<0.05) and the Wilcoxon test compared all the treatments in pairs, presenting a significant difference without exception. It was determined that the best treatment was the partial substitution of sucrose for 70% stevia and the CMC for 100% chia mucilage powder, which allowed obtaining the least variation in titratable acidity (0.45% tartaric acid), the best content of soluble solids (9.54 ° Brix), the lowest apparent viscosity (30.93 mPa.s), the lowest count of fungi and/or yeasts (5.7 ufc / mL) and the highest appearance (8.0 points “I like it a lot”) and acceptability overall (8.03 points “I like it a lot”) of the tamarind drink.
