The objective of this thesis is to determine the actions to be developed to solve the problem of the presence of forbidden chemicals for organic agriculture in the grain purchases of the company under study. To this end, the current management system for the production and storage of organic cocoa beans has been analyzed, evaluating indicators and methods in order to propose actions to reduce or eliminate the presence of positives in the raw material purchased. The quality tools have been used for the diagnosis and the proposed activities have as a framework a management model based on the continuous improvement of processes and the PDCA cycle. In first chapter the general aspects are described: Origin, production and varieties of the cocoa bean, world and national production, prices and markets. There is also a review of the conditions of the organic cocoa market in Peru. The second chapter shows as background two previous works related to the topic of study. As part of the theoretical framework, we talk about organic certification, the cocoa production chain, logistics, supply chain, process improvement, the PDCA cycle and quality tools. The third chapter describes the environment and the activities of the company, the problem, the objectives, the justification and the scope of the research. The diagnosis is made, analyzing the process and the indicators. Potential and root causes are determined. The fourth chapter presents the proposed management model, its validation and economic evaluation.
