The purpose of this research is to understand the relationship between consumption and the level of knowledge and the valuation of benefits of organic foods from the perspective of the segment that most demand these types of products in Metropolitan Lima, which are men and women between the ages of 25 and 55, belonging to NSE A and B. The research was carried out qualitatively, with 23 consumers as target of study. The relationship between the variables was studied using the Fundamental Theory method. The data was collected through in-depth interviews with thematic research guides. The research was structured in 2 stages, taking into account that first a group of experts was interviewed and then filtered and refined interviews with consumers. To analyze the data obtained, 2 categories and 12 study segments were established, with which crossings were made to identify connections and to reach, in a well argued manner, the best interpretations and meanings that consumers assigned to the situation of the consumption of organic foods. The result of the interviewees was that the level of knowledge and the valuation of benefits of organic foods reinforced the hypothesis towards greater consumption, identifying that the valuation of benefits had a higher incidence, mainly falling on consumers who had a greater degree of awareness towards health care.
