The objective of this research is the development of babyfood with dioscorea Trifid (purple potato) dehydrated by fluidized bed, obtaining a highly nutritional porridge. Design that was applied to the dehydrated by fluidized bed is completely experimental, randomized (DCA), with three variables of studies: thickness of 1mm and 2mm, speeds of air 24.3 m/s and 20.5 m/s obtained by the engine at different rpm, 35 and 30 rpm temperature of 55 ° C and 60 ° C, determining the kinetics of drying and proceed to the elaboration of the flour. Developing 8 treatments that will be a total of 24 experiments with 3 replications. In the preparation of baby food developed an experimental design, with an arrangement of factorial AxB; factor corresponding to combinations of banana flour and purple sachapapa flour; (A) = 30%, 70%; (B) = 40%, 60%; (C) = 50%, 50%; (adding the same amount of ingredients to three formulations: lecithin(0.5 g), milk powder (10 g), clove smell blood powder (5 g), pineapple (60 g), Myrciaria dubia (100 g), beef (0.5 g), cinnamon (0.5 g), brown sugar(15 g), CMC (0.08 g); B factor corresponding to the dilution for each formulation. Developing 9 treatments which will make a total of 27 experiments with 3 replications. Then analyses were performed physicochemical and microbiological testing of each product (flour of dioscorea Trifid and dioscorea Trifid porridge) made sayings in the laboratories of FIQ and FIA.
