Resumen: Esta tesis se embarca en la tarea de abordar los riesgos disergonómicos en la panificadora y
pastelería Nikol, utilizando un enfoque cuantitativo y el modelo hipotético-deductivo. La
investigación se estructura en torno a tres objetivos principales: identificar, analizar y
proponer medidas preventivas para los riesgos ergonómicos presentes en las operaciones
diarias.
Las evaluaciones detalladas de las tareas específicas utilizando el Método QEC (QUICK
EXPOSURE CHECK), como amasado, fermentado y horneado, y decorado, han arrojado
resultados significativos. En el amasado, se destacan riesgos elevados en la espalda y el
cuello, señalando la necesidad de investigaciones más exhaustivas. Por otro lado, el
fermentado y horneado presentan riesgos elevados en espalda, hombro/brazo y cuello,
indicando una urgencia inmediata de cambios. El decorado también revela riesgos
considerables en la espalda y el cuello, requiriendo atención prioritaria.
Las propuestas de mejora se centran en ajustes ergonómicos en las estaciones de trabajo, la
implementación de pausas regulares, capacitación en técnicas seguras y la promoción de la
conciencia postural. Estas estrategias no solo buscan abordar los problemas inmediatos, sino
también garantizar la sostenibilidad a largo plazo del bienestar de los trabajadores.
En síntesis, esta investigación no solo proporciona una hoja de ruta clara para mejorar las
condiciones ergonómicas en la panificadora y pastelería Nikol, sino que también contribuye al
conocimiento más amplio sobre prácticas saludables en el entorno laboral, con potencial para
ser aplicado en diversas industrias.
This thesis embarks on the task of addressing disergonomic risks in the Nikol bakery and pastry shop, using a quantitative approach and the hypothetical-deductive model. The research is structured around three main objectives: identify, analyze and propose preventive measures for ergonomic risks present in daily operations. Detailed evaluations of specific tasks using the QEC (QUICK EXPOSURE CHECK) Method, such as kneading, proofing and baking, and decorating, have yielded significant results. In kneading, high risks to the back and neck stand out, pointing out the need for more exhaustive investigations. On the other hand, fermenting and baking present high risks to the back, shoulder/arm and neck, indicating an immediate urgency for changes. The setting also reveals considerable risks to the back and neck, requiring priority attention. Improvement proposals focus on ergonomic adjustments to workstations, the implementation of regular breaks, training in safe techniques, and the promotion of postural awareness. These strategies not only seek to address immediate problems, but also ensure the long-term sustainability of worker well-being. In summary, this research not only provides a clear roadmap to improve ergonomic conditions at the Nikol bakery and pastry shop, but also contributes to the broader knowledge on healthy practices in the work environment, with the potential to be applied in various industries.
