The present study evaluated the effect on antioxidant activity and total phenolic content (TPC), expressed in Trolox and Gallic Acid equivalents (Gae) respectively, caused by the mixing of a cushuro protein extract (Nostoc Sphaericum) to a tea extract. green (Camellia sinensis). For this, 3 mixing methods were used that favor the formation of complexes: Simple mixture (MS), alkaline mixture (MA) and free radical mixtures (MR). Enhancer or inhibitory effects were obtained depending on the mixing method used. Both MS (15.66 mmol Trolox/ml, 1.22 mg Gae/ml) and MA (12.49 mmol Trolox/ml, 0.66 mg Gae/ml) reduced the antioxidant activity and TPC of green tea extract (16.63 mmol Trolox/ml, 1.41 mg Gae/ml), being the alkaline mixture method the one that obtained the lowest values. MR (17.15 mmol Trolox/ml, 1.5 mg Gae/ml), on the other hand, outperformed the other two mixtures and even the green tea extract in both trials. It is concluded that MR generates a synergistic effect in terms of the antioxidant activity of the green tea extract, for which it could be proposed as a mixture of interest for further studies and its use in the food/pharmaceutical sector.
