The research work aims to determine the thermal stability of a natural pigment from “Uvina” grape pomace (hybrid from Vitis labrusca and Vitis vinífera) applied to a model beverage under different heat treatments (80 °C, 90 °C and boiling temperature during 5, 10, 15 and 20 minutes). Changes occurred in colorant extract compounds of the heat treated beverage were evaluated: monomeric anthocyanin, total phenolic compounds, sedimentation, antioxidant capacity, turbidity, polymeric color, condensed tannins and color. The results evidence that the colorant extract used in the beverage treated at boiling temperature has better performance after the heat treatment, with lower color differences compared to beverages treated at 80 °C and 90 °C, the color change after the heat treatment would not be perceived by the consumer, lower turbidity values, higher total polyphenol content, anthocyanin content and antioxidant capacity. However, the beverage treated at boiling temperature has higher sediment content. On the other hand, the seed presence or absence in the grape pomace extract had an effect on the behavior of the compounds studied in the model beverage. The beverages elaborated from “Uvina” grape pomace extract, with and without seed, initially had with the same anthocyanin content (60,7 mg cyanidin/L). However, the non-heat-treated beverages containing extract of grape pomace with seed resulted in higher polyphenol concentration and antioxidant capacity, so after the heat treatment they showed an increase of those compounds and the anthocyanin content. The correlation index for total phenolic content and antioxidant capacity was 0,95, higher than the correlation index for anthocyanin content and antioxidant capacity 0,72. During storage, beverages have a similar behavior in anthocyanin content with a decreasing trend. While the antioxidant capacity showed a different behavior, the model drinks with extract of pomace with seed showed a decrease in the antioxidant, contrary to those elaborated with extract of pomace without seed, which had a slight increment.
