The purpose of the study was to determine the appropriate sampling method, as well as to make estimates of chronic malnutrition (CM) by age, sex and educational management. We have used cluster sampling (schools) combined with stratified (educational management) and systematic selection; in a sample of 16 schools of state management and 20 of non-state schools, obtaining information from 3000 students from the first to fourth grade of elementary school, from the Callao Region. The height / age relationship was analyzed with the reference of the National Center for Health Statistics (NCHS) of the United States of America and the World Health Organization (WHO), considering as a child in CM the one with size below minus two standard deviations. It was determined that the average size of the students had an increase of 3 cm. to 2016, compared to the year 2005. The CM in 2016 reaches 2.5% (1455 students) with the NCHS pattern and 2.9% (1724 students) with the WHO. According to the NCHS reference, the CM decreases by 4.1% in 2016 (2.5%) compared to 2005 (6.6%). In this period, the CM also decreases by age, sex and management of the educational institution. The Odds Ratios of Prevalence (ORP) with the NCHS pattern by sex and management decreases the year 2016 with respect to the year 2005 to 1.27 and 2.29 respectively; It turns out that a student who is chronically malnourished is 1.27 times more likely if he is a man than a woman, and that a student is chronically malnourished is 2.29 times more likely if he studies in a state educational institution to study in a non-state one. To have about 96% of valid cases, for the ages of 6 to 9 years in the size survey to school children from the first to fourth grade of primary school, it is advisable to do it in the first semester of the year, preferably the months of May and June
